In hybridization theory, you need as many hybrid orbitals as you have "things" (usually atoms you're bonded to, sometimes lone pairs that take up space, etc.) attached to an atom. You need to leave a p orbital out for every pi bond. Most atoms (many metals excepted) have one s and three p orbitals to bond with.
